{Leftover Baguette} Cheddar & Scallion Bread

{A leftover baguette was sitting on my counter this week and I turned it into two of my favorite comfort foods.}  

Day two of my leftover baguette found itself turned into Giada De Laurentiis’ Cheddar and Scallion Bread.  This is seriously so incredible, you’ll wish you had an entire platter to yourself.

Ingredients

8 ounces sharp cheddar cheese, shredded or coarsely grated
6 ounces butter, at room temperature
4 scallions, finely chopped
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1 (1 pound) loaf ciabatta bread, cut in half horizontally

Directions

Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.  In a food processor, combine the cheese and butter. Process until the mixture is smooth. Add the scallions and pulse until combined. Season with salt and pepper, to taste. Spread the cheese mixture on the cut sides of the bread. Place on a baking sheet and bake for 10 to 12 minutes until golden.Using a serrated knife, cut the bread into 1-inch thick slices and serve.

White Chocolate & Strawberry Pancakes

{These are truly decadent.}

 White Chocolate & Strawberry Pancakes

makes lots of little pancakes.

{wet ingredients}

2 eggs

1/2 cup plain yogurt

1/2 cup whole milk

1 cup strawberry sauce (take 2 cups of frozen strawberries; microwave 1 1/2 minutes and smoosh them with a potato masher into a chunky strawberry sauce).

1/4 teaspoon vanilla

{dry ingredients}

1 1/2 cups all purpose flour

2 teaspoons baking powder

1 teaspoon salt

1/4 cup sugar

6 oz. white chocolate chips

{instructions}

Heat griddle and spray with cooking spray.

Combine wet ingredients.  Whisk all the dry ingredients together (minus the chocolate chips) and add to the wet ingredients.  Stir to combine.  Stir in the white chocolate chips.

Place heaping tablespoons onto the griddle and cook the way you cook pancakes!
