Smoky Jalapeno Bacon Burger

You are not going to want to miss this!  I experiment with a lot of burgers, but this is hands down my favorite!  I never follow recipes exactly, but play around with my own tastes.  Here is a general recipe for how I made them, but please play around with them to match your favorite flavors and what you have around the house.


For 2 Burgers:

1/2 pound of organic ground beef (85/15)

2 strips of bacon, cut into small pieces

One jalapeno (including seeds and ribs), diced

1/2 teapsoon paprika

Freshly ground black pepper, to taste

Pinch of salt

Sharp White Cheddar Cheese, sliced

Two plain english muffins

Light sour cream

Scallions, finely chopped

Mixed tender greens


Gingerly mix the beef, bacon, jalapeno, paprika, pepper, and salt just until combined.  Split into two patties.  Grill on medium-high for 4-5 minutes on each side, or until desired doneness, adding the cheese during the last two minutes of cooking time.  While the patties cook, toast the English muffins.  Mix the sour cream with the scallions and spread liberally on the cut side of each English Muffin.  Add greens to the bottom English Muffin, top with the burger, add more greens, and crown with the top of the English muffin.

Serve with baked sweet potato fries!  Enjoy.
